  1. Preheat the oven to 180 degrees Celsius.

  2. Grease a 6-cup baking dish.

  3. Place eggs, sugar and vanilla into a bowl. Whisk until combined. Add rice and milk and pour into the baking dish.

  4. Place the dish into a baking pan with enough boiling water to come half way up the sides.

  5. Bake for 20 minutes. Remove from oven and top with sliced fruit. Sprinkle with sugar.

  6. Reduce oven to 150 degrees and bake for 20-25 minutes or until set.

  7. Serve warm with cream if desired.
