Method


  1. Add the oil in a saucepan and fry the onion and garlic for 4-5 minutes.

  2. Add the chicken breasts, peppers and mushrooms. Season with salt and pepper. Cook for 4-5 minutes.

  3. Stir in the rice along with a cup of chicken stock and mix well. Keep stirring gently until the liquids are absorbed completely.

  4. Pour in the second cup of the stock gradually stirring continuously until the mix turns creamy. Add the peas, cover the pan and cook for 5-10 minutes.

  5. Garnish with parsley and serve.
