Method


  1. Fresh, fresh, fresh! Sunwhite Sea Salt Brown Rice Chips pair beautifully with a hand-made eggplant dip for weekend celebrations. To make a tasty roasted eggplant dip, preheat oven to 200 degrees celcius and start caramelizing onions – heat the olive oil in a fry pan over medium heat, once hot add onion and sugar and spread the onions out evenly over the pan. Let cook, stirring occasionally. Meanwhile, place eggplant, tomato and garlic into a lined baking tray and drizzle with olive oil. Roast for about 30 minutes, then remove tomatoes and garlic, leaving eggplant to roast for a further 10 minutes or until soft. Let cool.

  2. Scoop flesh from eggplant, squeeze out flesh from garlic and place in a bowl with the tomato, lemon juice, tahini, olive oil and add salt and pepper to taste. Mash with a fork until combined and top with capers to serve alongside our Sunwhite Sea Salt Brown Rice Chips. Enjoy!
