  1. Whisk olive oil, lemon juice, honey, mustard, chilli, thyme, salt and pepper in a large bowl.

  2. Add the mushrooms and raisins and stir to coat.

  3. Cover and set aside for 1 hour to marinate.

  4. Cook the rice following absorption instructions on the packet. Remove from the heat and set aside for 20-30 minutes to cool to room temperature.

  5. Stir the rice into the mushroom mixture.
