Method


  1. Cook the rice following absorption instructions on the packet, remove from the heat, and spoon into a colander.

  2. Refresh rice in cold water, set aside in a colander to drain well and then transfer to a large bowl.

  3. Add the peach, cucumber, onion, parsley and walnuts to the rice. Drizzle over olive oil and lemon juice. Season with salt and pepper. Stir gently to coat.

  4. Arrange the butter lettuce over a large serving platter. Spoon the rice salad over.
