Method


  1. Cook the rice following absorption packet directions. Remove from the heat and add the lemon rind and 2 tablespoons of the juice. Stir with a fork to combine and set the rice aside to cool completely.

  2. To make the buttermilk dressing, combine all the ingredients in a screw-top jar. Season with salt and pepper and shake until well combined. Taste and add lemon juice if desired.

  3. Arrange the lettuce leaves onto a large platter and spoon over the rice. Scatter over the prawns, avocado and chives.

  4. Drizzle over the dressing and serve with lemon wedges.
