  1. In a pot, pour in 2 tablespoons of oil over medium heat and cook the onion for about 2 minutes until it becomes tender.

  2. Add the rest of the oil and stir in the carrots, mushrooms, and corns stirring the mix well.

  3. Add the rice and peas along with some salt and pepper. Stir gently to combine.

  4. Dissolve the vegetable stock cube in the chicken stock then pour it in the rice pot.

  5. Stir the mix well until the rice and vegetables are covered with the stock.

  6. Cover the pot, lower the heat and cook for 25 to 30 minutes.
